Cheese-Stuffed Grilled Shrimp Recipe

This wonderful grilled shrimp recipe is a great example of southern food. The Gulf of Mexico produces some amazing seafood, and that includes shrimp. The following recipe also includes another southern favorite – bacon. There’s even some molasses in the sauce! I like to make extra sauce so that I’ll have plenty for dipping.

Cheese-Stuffed Grilled Shrimp Recipe

Ingredients:

  • Extra-jumbo shrimp, peeled and deveined
  • Old Bay seafood seasoning
  • Block of pepper jack cheese
  • Strips of bacon, cut in half
  • Toothpicks
  • 1/3 cup molasses
  • ¼ cup butter
  • 1 teaspoon minced garlic

Directions: Rinse and dry shrimp and set aside. Cut cheese into small thin rectangles. Place a slice of cheese inside the split of each shrimp and wrap one-half slice of bacon around each stuffed shrimp, securing with a toothpick. Sprinkle stuffed shrimp with Old Bay Seafood Seasoning.

Combine molasses, butter, and garlic in a microwave-safe bowl and microwave for about thirty seconds. Stir and return to microwave. Zap for about fifteen more seconds.

Place shrimp directly on medium-hot grill that has been cleaned and oiled. Cook shrimp for three minutes per side. Brush shrimp with molasses butter and grill for one more minute per side. Serve with extra sauce for dipping, if desired.
